Spanish Style Cauliflower Rice

Spanish Cauliflower Rice

Ingredients:

1-12 oz. Bag of Trader Joe’s Frozen Cauliflower Rice

½ cup chopped or sliced red pepper

½ cup chopped or sliced green pepper

½ cup frozen corn

1 teaspoon olive oil

½ packet Sazon Goya (low sodium)

½ packet Goya Chicken Bouillon (powdered)

Instructions:

  1. Add oil to a large pan
  2. Sautee peppers
  3. Add cauliflower rice and corn
  4. Cook 5 minutes covered
  5. Add sazon and chicken bouillon, mix well.
  6. Cook another 2-3 minutes covered.
  7. Enjoy 🙂

Homemade Granola

Almond-Butter-Granola-4

Ingredients:

2 cups of raw rolled oats

1/2 a cup of sliced almonds

1/2 cup chopped pecans

1/4 cup of raw sunflower seeds

2 tablespoons of shredded unsweetened coconut

1 teaspoon of chia seeds

1/2 teaspoon of vanilla extract

1 large pinch of sea salt

2 tablespoons of coconut oil

2 tablespoons of maple syrup

Instructions:

  1. Place all the ingredients in a bowl.
  2. Mix well together until all the coconut oil and maple syrup coat all the ingredients.
  3. Spread it out on a baking sheet and bake at 300 for 8-12 minutes (line with parchment paper for easy clean-up).
  4. Start off with 8 minutes then add two minute increments until it’s crispy. 

     

    WARNING: Do not overcook!

Apple Banana Muffin

Ingredients:

2 Large eggs, lightly beaten

1 Cup Mashed ripe banana (approx. 2 medium)

1 Tbsp. unsalted organic grass-fed butter, melted

1 cup almond flour

1/2 cup gluten free flour

3/4 tsp. baking soda

1 dash sea salt

1/2 cup chopped apple

Instructions:

  1. Preheat oven to 350 F.
  2. Line muffin pan with nine muffin liners and lightly coat with spray.
  3. Combine eggs, banana, and butter in a medium bowl; mix well. Set aside.
  4. Combine flour, baking soda, and salt in a medium bowl; mix well.
  5. Add flour mixture to egg mixture; mix until blended.
  6. Add apple; mix until just blended.
  7. Divide batter evenly between muffin cups
  8. Bake for 18-22 minutes, or until golden brown and toothpick inserted into center comes out clean
  9. Transfer muffins to rack; cool
    **I added a few dark chocolate chips and chopped pecans to the top before baking. You can add your favorite topping!
  10. Enjoy 🙂
