Greek Pasta Veggie Salad
Ingredients:
1 box of brown rice pasta or pasta of choice
1/2 c. Sliced Black or kalamara olives
1 c. Steamed broccoli florets- cut small
1 c. Cherry or grape tomatoes cut in half
1/4 c feta cheese (crumbled)
1/4 c of you favorite brand zesty Italian dressing.
Instructions:
Boil pasta according to package
Drain and cool off (you may want to add a little olive oil while it cools off so it doesn’t stick together)
Steam broccoli while the pasta cooks
Cut tomatoes in half
Combine pasta with all ingredients except for the feta.
Add dressing and gently stir
Sprinkle feta cheese
Enjoy!
